Paired delightfully with the Steamed Collard Wraps*, this dressing is so easy to make!
1 cucumber, sliced in half, lengthwise,
seeded and chopped
¼ cup raw tahini
¼ cup extra virgin olive oil
Juice of 1 lemon
½ teaspoon salt
1 clove garlic
2 tablespoons minced red onion
1 teaspoon ground coriander
Put all the ingredients in a blender or food
processor. Process until smooth and
creamy, stopping occasionally to scrape down the blender jar or work bowl. Stored in a covered container in the
refrigerator, dressing will keep for 3 days.
Shake well before each use.
