Blood Orange Gratin

Serves two

Ingredients
2 blood oranges
2-3 tbsp. chopped hazelnuts
2 tsp. sugar or maple syrup
Aged balsamic vinegar

1. Slice the oranges (one per person) crosswise into 1/3-inch-thick sliced rings.

2. Peel the rind off each.

3. Lay the orange slices in a bowl, sprinkling chopped hazelnuts in between each layer.

4. On the top layer, sprinkle sugar.

5. Using a kitchen torch, melt the sugar to create a hard caramel crust or place the orange stack under the broiler (place in an oven-proof dish and transfer the finished product to serving plates).

6. Garnish with remaining hazelnuts and add a small drizzle of aged balsamic vinegar with a thick, syrupy consistency.
