CRANAPPLE SWIRL SAUCE

This sauce offers a sweet yet tart flavor that will complement any holiday dinner. It’s a bit more colorful than your average cranberry sauce and also includes nuts for added texture and taste.

INGREDIENTS

1½ cup cranberries

1 apple, chopped

1 cup water

3/4 cup cherry juice ( you can also use pomegranate or raspberry juice. Avoid juice “drinks” which can have a lot of added sugars)

3 teaspoon orange zest

3 teaspoon lemon zest

3 tablespoon apple cider vinegar

3 teaspoon maple syrup

3/4 cup carrots grated

1 large cinnamon stick crushed or 1/2 teaspoon cinnamon

Pinch of salt

½ cup sunflower seeds or crushed walnuts

DIRECTIONS

Place cranberries, apple, water, juice, zests, vinegar, maple syrup, carrots, cinnamon and salt in a pot and bring to a boil. Cover and simmer for 20 minutes or until liquid has evaporated. Reduce heat and add nuts. Stir for 5 minutes. Chill in refrigerator and serve slightly cool.

Makes about 8 1/3 cup portions
