Quick Bean Burritos

1 15-ounce can black beans beans ( be sure to drain)
4 whole-wheat or corn tortillas
1 cup shredded romaine lettuce or spinach leaves
2 medium green onions, chopped
1/2 cup salsa
1/2 cup Guacamole

Directions
Heat beans in small saucepan or in microwave until warmed through.

In a large skillet, heat a tortilla until it is warm and soft, or warm tortillas in the microwave. Spread about 1/2 cup of the beans down the center of the tortilla, then top with 1/4 cup lettuce, 1 tablespoon green onions, 2 tablespoons salsa, 2 tablespoons guacamole, if using. Fold the bottom end toward the center, then roll the tortilla around the filling. Repeat with remaining tortillas or let those dining make their own.

Makes 4 servings
