CHICKEN BREAST WITH SPICED YOGURT SAUCE AND POMEGRANATE

Basic Broiled Chicken Breasts


INGREDIENTS:
2 boneless, skinless chicken cutlets, rinsed and patted dry with paper towels
1 tablespoons soy sauce
Freshly ground black pepper
2 teaspoons freshly squeezed lime juice

DIRECTIONS:
1. Preheat the broiler. Brush the chicken pieces with the soy sauce and sprinkle them with pepper. If there's time, let the chicken marinate in the refrigerator for 1 hour or more.
2. Broil the chicken very quickly; it should take no more than 3-4 minutes per side. Remove from the oven and sprinkle with lime juice. Serve hot or at room temperature.

Spiced Yogurt Sauce


INGREDIENTS

1/2 cups plain nonfat yogurt (preferably Greek style)
1/8 cup minced shallot
1/2 tsp. peeled grated fresh ginger
1/8 tsp. cardamom
Pinch of cayenne pepper
1 Tbs. minced cilantro
1Tbs. minced parsley
Salt and freshly ground pepper to taste

Pomegranate seeds from 1/4 pomegranate

DIRECTIONS:

Mix together all ingredients except pomegranate seeds. Place a dollop of the yogurt sauce on top of chicken breasts and then garnish the sauce and the area around the chicken with Pomegranate seeds

Makes 2 2-oz chicken servings with 2 tablespoon toppings of yogurt sauce
