Makes 9 1-cup servings
These chili beans are quick to prepare and delicious with Corn Bread or Polenta. Vegetarian ground beef substitute adds hearty flavor and texture as well as protein. Suggested products include Yves Veggie Ground Round, Harvest Burger for Recipes, and Gimme Lean Beef Style. You could also use 1/2 cup of textured vegetable protein (TVP) which has been softened with 1/2 cup of boiling water, or 2 to 3 crumbled Boca Burgers. You will find these products in natural food stores and many supermarkets.
2 15-ounce cans pinto beans, undrained
1 15-ounce can tomato sauce
1 4-ounce can diced green chilies
1 8-ounce package vegetarian ground beef substitute ( OPTIONAL)
1 tablespoon onion granules or powder
1 teaspoon garlic granules or powder
1 cup fresh, frozen, or canned corn
1/2 teaspoon ground cumin
Combine all ingredients in a pot. Cover and simmer over medium-low heat for 15 minutes, stirring occasionally.
