COCONUT KALE WITH RED PEPPERS

Slightly sweetened with the tropical taste of coconut, this powerhouse green veggie provides a host of vitamins, minerals and antioxidants.

INGREDIENTS

2 Tbs coconut oil ( unrefined)

½ yellow onion or ½ leek- finely chopped

1 bunch Kale ( lacinato or “dinosaur” kale works best)- finely chopped with stems removed.

1 red pepper, diced

Water as needed

Salt and pepper to taste

DIRECTIONS

Place oil in pan and add onions. Sautee for 3 minutes. Add Kale and continue sautéing for 5 minutes. Add red pepper and a touch of water to moisten pan if necessary. Add pinch of salt and pepper according to your taste. Sautee for 5 more minutes or until kale leaves are softened. Remove from heat and serve.

Preparation time: 15-20 mins
