CREAMY TAHINI SAUCE

This dressing can be used in a pita over falafel, as a dressing on a raw vegetable salad, or over cooked vegetables, rice, and tofu. Garnish with parsley.


Prep Time: 10 minutes
Total Time: 10 minutes

3/4 cup sesame Tahini
1/2 cup plain yogurt ( you can eliminate if you are sensitive to dairy)
5 to 6 tablespoon lemon juice*
1 tablespoon lime juice*
1 to 2 teaspoon garlic, crushed
1/4 cup parsley, minced
1 tablespoon flax oil or olive oil
1/4 teaspoon sea salt
1/2 to 1 cup water ( For thicker dipping sauce, do not add water)

*Try adding a balsamic vinegar or brown rice vinegar for extra tangyness or in place of lime/lemon or both

Place tahini, lemon juice, garlic, parsley, flax/olive oil, and salt in a food processor fitted with the steel blade. (You can also use a blender.) Blend ingredients in a food processor until smooth and creamy. Keeping the motor running, slowly drizzle in the water, checking every now and then to monitor the consistency.
