1 large onion, peeled and chopped
2 teas. Oil
2 c precooked chickpeas or one 19 oz can, drained
2 TBS fresh dill finely chopped- I used dried
1/2 LB fresh spinach, rinsed and chopped into bite size pieces
2 TBS lemon juice
salt to taste.
Saute onion in oil in la large frying pan over medium heat for 2 mins.
Add cooked chickpeas and dill and remaining ingredients.
Stir fry for 5 minutes, stirring occasionally. Serve warm.
